You should first prepare the marinade by whisking an egg and mixing in 3 tablespoons of dark soya sauce, 2 tablespoons of sugar, 1 tablespoon of white pepper, 1 tablespoon of garlic and 1 tablespoon of five spice powder. Pound some chicken breast fillets with a mallet to tenderise and flatten them into chicken steaks, cutting them into smaller pieces if necessary. Soak the chicken in the sauce you have prepared and marinate it overnight.
When it is time to cook a piece of chicken, coat it with sweet potato flour and let it stand for a few minutes. Afterwards, brush a bit more marinade onto the chicken to dissolve any excess flour. Heat up a thin layer of oil in the frying pan and fry the chicken until both sides are golden brown – it should take no more than 5 minutes. When it is ready, transfer the chicken steak onto a plate, use a piece of kitchen paper to soak up any excess oil and enjoy!
