Egg plant with spicy pork mince 魚香茄子Taiwanese food

This is a nice spicy pork mince dish with lots of egg plant (aubergine) in it. A lot of the spiciness comes from hot yellow bean paste. The sauce is dark and tasty. Service with plenty of white fluffy rice… Sometimes this is translated as ‘Fish taste egg plant’ however there is no fish nor fish taste, but that’s how it is known traditionally. It’s delicious please try it!
