I’ve never used this brand flour before so can’t confirm it will be ok
Cooking Oil
1 tsp granulated sugar
8 oz White sweet potato

    I have tried to make this thing about six different times, and for the life of me, I can't get it to puff up with one large pocket. I don't know if I'm pushing too hard or not hard enough or too soon or there's not enough water in the dough to make steam, but I can't seem to figure it out. I don't even understand how it creates a pocket in the first place. In cream puffs and eclairs, the gluten creates a net to contain one big bubble, but sweet potato starch doesn't have gluten so I don't have any idea what the heck is going on.

    The Sweet Potatoes That You Use Are A Different Color Then The Ones I Cook With The Ones I Cook With Are A Deep Red Orange Color Could I Use Those?

    I just made this recently and it was delicious! I didnt have sweet potato flour so I used rice flour, so the texture wasnt very chewy like how it should have been. I think adding one tsp of sugar wasnt sweet enough for me, but I eat a lot of sweets so that must be why. Thank you so much for this recipe!
