Taiwanese oyster omelette street food 蚵仔煎





This is a very popular street food in Taiwan. Like Oysters? Like Omelettes? Like Taiwanese food? Please try this! The sauce is easy to make from mixing the ingredients. Then you make the oyster omelette as shown in the video.
SAUCE
mix 250ml water, half spring onion, 2 tbsp ketchup, 2 tbsp sweet chili, 1 tbsp peanut butter and1 tbsp sugar

OMELETTE
200g oysters, 2 eggs, 275ml water (add a bit at a time to desired thickness – won’t need it all), 6 tbsp sweet potato flour, lard, 3 tbsp tapioca (or corn) flour, ginger, spring onion, garlic, fish sauce, green vegetables to mix and for garnish

    Hello! I just made a oyster omelette using your recipe and it turned out great! My mom loved it! I'm making it again tomorrow! Thank you so much for the recipe! I almost ran out of potato flour but your recipe only needs 3 tbsps, which is the exactly the amount I have left 😀 I used cornstarch instead of tapioca starch.

    I tried to follow your recipe but I had a problem with the sauce. You don't mention flour for the sauce recipe yet when you go to cook the sauce, you start cooking it with flour first.  There is no mention of what flour you used or how much. I assumed it was corn flour/starch. Please have a look and correct the recipe. Other than that, it was very good. I will try it again with potato starch the next time I make it. Thanks again, Cyn
