Taiwanese Beef Noodle Soup and Filipino Kinalas Recipes

Beef noodle soup is a staple Asian dish; so much so that each Asian country probably has it. Today, we take on the Taiwanese and Filipino versions!

We might speak different languages but Asia is actually very connected through its food! Same Same, But Different is a show that will explore dishes similar to two cultures and tackle the nuances that make our dishes uniquely ours.

Taiwanese Beef Noodle Soup (2:44)
1 – 1.5 lbs. beef shank
green onions
1 yellow onion
2 – 3 carrots
1 tomato
8 cloves garlic
ginger (small 3″ piece)
1/2 tsp. fennel
3 star anise
8 whole cloves
1 tsp. Sichuan peppercorns
1/2 cinnamon stick
3 – 4 dried chilis

6 cups beef stock
6 Tbsp. soy sauce (I’m using 5 Tbsp. light soy sauce, 1 Tbsp. dark soy sauce)

Noodles & other soup ingredients:
baby bok choy
pickled mustard greens
fresh red chilis
cilantro (garnish)

Filipino Kinalas (6:31)
4 portions fresh egg noodles

1kg bone in short rib
500g beef brisket
1 tbsp whole peppercorns
2 pcs bay leaves
1 ginger (thumb size slice)
4 cloves of garlic
Sea Salt
2 brown onions
Water to cover

Shrimp Stock
10 prawn or shimp heads
1 whole garlic unpeeled
2 bay leaves
1 brown onion
Salt and pepper

2 cups of shrimp stock
3 tbsp flour
2 tbsp butter
1 tbsp fish sauce
2 tbsp pineapple vinegar
4 tbsp hibe, minced
3 cloves garlic, minced
1 red onion, minced

Scallions, chilies and calamansi to serve.

    that kinalas looks delicious, but maybe you should try beef mask/beef cheek. the reason why it's called "kinalas" is because after you boil the cow's head/mask, you "kalas" (detach) the meat from the bone/skull, and that's the usual meat we use in kinalas. 🙂

    @9:40 hibi/hibe alam ng mga taiwanese yan kasi ang nag popularized nyan, mga chinese from southern china na dumayo sa pinas. He Bee- He (shrimp) Bi (rice) tawag nila dyan, Ebi naman sa mga hapon ang shrimp.

    Huhu I miss eating and sipping hot beef mami sa mga kalye-kalye and the Sinanglaw of the Ilocanos.

    Medyo na OOC lang po ako dun sa mga cookware nyo po, medyo may little bit of dirt/grime. The OC me is always noticing this on you videos 😅😁✌🏼

    Is Erwan even filipino? Why is he always Philippine rep isn't he french or smth.. not sure abt that but I'm sure he's recipes are never authentic where does he get it from
